1 cups water
1 cup uncooked rice
14 oz. diced tomatoes, undrained
pound Velveta cheese, diced - or - 8 oz. jar Cheez Whiz spread
1/4 cup finely chopped onion
1 tsp. italian seasoning
2 to 3 pounds skinless chicken
2/3 cups grated parmesan cheese

Stir together water, rice, tomatoes, cheese spread, onion and 1 tsp. of the italian seasoning in a greased 9"x13" baking dish. Lay the chicken on top of the rice mixture. Sprinkle with parmesan cheese and remaining italian seasoning.

Bake at 375 degrees for 45-50 minutes or until chicken is tender. Let stand for 5 minutes. Makes 4 to 6 servings.
