This is a very finicky recipe, but well worth it!


24 squares of graham crackers, crushed
cup butter, melted
12 oz. cream cheese
cup granulated sugar
2 eggs, beaten
The juice from a 9 oz. can of pineapple
3 tsp. vanilla
1 pint sour cream


Mix together graham cracker crumbs and butter. Press into the bottom of a spring form pan.

Crumble the cream cheese into a bowl and gradually beat in the pineapple juice to make fluffy. Add the sugar, eggs, 1 tsp. vanilla. Pour over crust.


Bake at 350 degrees for 20 to 40 minutes, till it is just set in the middle. Mix together the sour cream, 3 tbsp. sugar, and 2 tsp. vanilla. Pour over the top. Bake for 5 minutes. Chill 12 hours before serving.
