ZUCCHINI BREAD


 

3 eggs
3/4 cup oil
tsp. vanilla
2 cups zucchini, grated
2 cups granulated sugar
3 cups flour
1 tsp. baking soda
tsp. nutmeg
1/4 tsp. baking powder
2 tsp. cinnamon
3/4 cup walnuts, chopped

 

Topping:

cup light brown sugar
1 tsp. cinnamon

Grease and flour 2 loaf pans and set aside.

Beat eggs until foamy, add zucchini, sugar, oil, and vanilla, mix lightly, but well. Add flour, salt, soda, baking powder, cinnamon, nutmeg, and nuts. Mix well. Pour into the loaf pans and sprinkle on the topping.

Bake at 325 degrees for about 50 minutes.
